My Sops of Wine are pretty, medium-sized apples with a streaky red blush over yellow.
They are oblate, modestly ribbed, and decorated with tiny light-tan lenticel dots.
I reviewed Sops of Wine in 2013, then had another bite, not as good, just two years ago.
These three snapshots capture some of the variations to which this apple is prone.
Sops of Wine is a mid-season variety. October, when I bought and ate this apple, was a busy month, and I've only now gotten my notes together to publish.
Biting in
Its flavors are initially vaguely floral with a nutty or grain-like accent, then a more luscious fruity flavor, including a little pear, that at the end of a bite leaves a faint almost creamy custardy aftertaste.
What I do not get is any hint of a savory flavor such as one can find in Winesap (from Winesop, so the same general idea).
The closest anything came to that was that nutty or roast-grain note, never strong, during the first part of the chew, and that from only one of the samples.
A wine sop is a piece of bread soaked in wine. Maybe a sweet white?
I could want a firmer texture, but the parade of flavors, the way they unfold, is quite nice.
