If you can find it, the sturdy and elegant Esopus Spitzenberg apple makes an admirable choice in December.

Speaking of "knowing": the place-name Esopus refers to a town in New York's apple-rich Hudson Valley, also to a tributary of the Hudson River.

It is pronounced "eh-SOAP-us," not "EH-sup-us."
